How do you insulate a 3 season cottage?

My house is a seasonal structure in Vermont . The exterior verticle sheathing boards are the finished interior walls. The clapboard siding and wood trim and windows will be removed and replaced. Clients would like to add a little insulation but thickness is limited. Considering adding 1 ½" thick insulated Zipwall system which would also be added to roof before new slate is installed. Although the R value is minimal, the building will benifit greatly from an air seal. I am concerned about the dew point and looking for advice on vapor barrier material and location.
